acerXThis sour is our third brew using ’16 maple sap from Double-D Farms up to Acton, these were the last runnings of the season. Some of the sap had very active flora and fauna as evidenced by it’s milky appearance. Acer-X is fermented with native wild yeast from our first coolship brew as well as commercial scottish and saison yeasts. Graced with chickweed, burdock root, wormwood, and lemon rind, OO LA LA!.

Catnip, chickweed and a mugwort give this invigorating gruit a feisty herbal flavor. Named after Butch’s feisty grandma, this quaff is clean, crisp, and delicious!

Catnip and a few other goodies give this invigorating gruit a feisty herbal flavor. Named after Butch’s feisty grandma, this version features locally foraged feral pears, courtesy of Jenna Darcy. A “cordial” fermentation was done with a small portion of the pears to culture naturally occurring yeast and bacteria from the pear skins. This was added to the main fermentation right before racking. Clean, crisp, and delicious!

Remember Moosehead beer? Well, this is the real deal–vegetarians beware!  Sage, Labrador Tea, and Sweet Gale, all plants found in the harvest area, blend with a certain broth for a satisfying amber gruit possessing a subtly peculiar mouth-feel and finish. (Meet Old Glory 802 and read about her transmogrification into Bog Mare – not for the faint of heart.)

A robust porter based gruit with several pounds of beef bones added to the boil for a unique savory mouth feel. Also Sweet Gale, Galangal Root, and Burdock Root. A most satisfying quaff! 


BRETT PALE ALE (BPA)

Pale Ale

This is the latest installment in our on-going “IPA Plus” series, variations on our Yankee Badass IPA recipe. BPA is fermented for a relatively short time with just brettanomyces lambicus. The brett contributes a slight fruity, faintly funky taste which plays well with the YB blend of hops. Dry & refreshing indeed!

This special brown ale-based sour-mash beaut sports bittersweet, horehound, myrtle and shepherd’s purse.  Sour-heads rejoice!

Here’s a gruit that’s actually Lumbersexual 2.0. Basic malt  bill is similar with the addition of some amber malt and a bit less rye. Wormwood and blessed thistle make the cut again with the addition of gentian, lavender and a big dose of sea buckthorn. The yeast is a big change: our house funk (literally from a spontaneous ferment earlier this year) blended with Belgian saison yeast. If you got a beard, this is your weird!


CAP’N BEEFPARTS

Offal Porter

ABV 6.2%

Sorry vegans and vegetarians, this version sports beef and hog offal, specifically hearts, liver and kidney courtesy of South Berwick’s own Thistle Pig restaurant. The beefy bits were cut into strips and added to the boil. A bit of rye, roasted wheat and pale chocolate round out this robust malt bill whilst artichoke leaf, juniper berries and star anise spice it up. Take your time drinking this as it’s taste deepens drastically as it warms–yet another roller coaster ride for your palate!

A new wit bier from the mind Josh, rife with torrified and malted wheats, it is a thirst killer indeed.


CHAGA GROOVE (Special Pour)

This brew has a lot to taste! Liquid base contains 50% maple sap (Double-D Farms, Wells, ME), Maine-foraged chaga mushrooms, and nutmeg in the boil, then aged for a few months in a Mad River rum barrel. Talk about your goods from the woods! (8oz pours, no growlers.)

This light ale is built on wheat and pilsner malts. Dover (NH) home grown hops and foraged sweet gale carry out bittering duties and a big dose of foraged wild cherries was added a few days before kegging. Subtle, dry, gorgeous.

Back for it’s seasonal visit! Dark colored but not heavy bodied, 7.4% but not boozy, this black IPA-styled base features chaga, pine candles, and spruce tips–all locally foraged. New-bud evergreen tang, not like a christmas tree, though. “Oddly delicious.”

A pils/wheat hybrid with a liberal dose of honey malt, this light gruit contains a touch of Sorachi Ace hops, Mugwort, Fennel seed, Sage, &, you guessed it, pounds of smashed foraged crabapples. Some of the apples were Delicate, slightly tart, and uber sessionable!

It’s our Shepherd’s Crook on steroids! Well, extra malt and more New Zealand hops actually. It’s an imperial wheat pale ale designed for domination!

By day she’s also known as Aphrodite, the Greek goddess of love, but by night she’s a bourbon barrel-aged Belgian golden strong ale. The Brett and Lacto render her simply DiViNE.

There’s also local honey from Blanchard Farmstead in there, as well as yerba santa, star anise, and wild cherry bark. No hops. Folks have likened the taste to a cereal they used to eat as kids… We simply say: submit to the Dominar, you’ll be glad you did!

Brewed for International Gruit Day 2015, this collaboration between Cambridge Brewing Co. and EEB yielded a delicate blonde gruit, a light saison really. The gruit blend contained spikenard, rose hips, yarrow, and wild lettuce. Balanced, subtle, one of the best gruits ever brewed in our facility!

This is our version of the classic white beer featuring pilsen and wheat malts, and instead of hops, an understated blend of Spikenard, Yarrow, Meadowsweet, and a dash of Mistletoe. Another great intro gruit–a most mellow ale.

ENGJOECode named Red-Eye Joe, this dark beauty features several pounds of Ports City’s freshly roasted espresso bean, some chocolate malt, and a dose of falconer’s flight and simcoe hops. Ryan says “This my jam!” Tre’ satisfying.

Roasty and well endowed with pucker-power, this is a wondrous pour! Usually sour, this latest batch is blended with last year’s–aged in a bourbon barrel for 13 months–just a tad tart!

In Greek mythology, Erebos was a primordial deity, one not taking human form, representing the personification of darkness.

This attempt features a simple pale ale grain bill spiked with some smoked malt. Sweet Gale, Wild Rosemary, & Yarrow create a spicy bitter that partners well with sweet malt flavors.  Explore it’s murky depths and visit older tymes.

American Barleywine

Fallen+Angel“The recipe for this big brew dates all the way back to Alex and Butch’s garage days, back when the bunker was just a twinkle in their eyes.   Production began over a year ago (fun fact—if you tried Omaha this past year, you drank a saison that was brewed with the second runnings from Fallen Angel).  After the initial brew and fermentation cycle, Alex transferred the beer to stainless steel tanks for eight months.  From there, the aging angel went into bourbon barrels for six weeks before making its final move back into the stainless steel tanks to mellow out for an additional four months.  Clocking in at 11.9%, Fallen Angel has a smooth, raisin-like sweetness with light bourbon and vanilla notes.  Because of its gravity, Alex could brew only one barrel of this sweet beaut.  Be sure to get some while it lasts.”      – Eric Martinson

greenmanAn obscure German style, Lichty is a light slightly sour 45% wheat gruit with beechwood smoked malt. Traditionally there’d be some hops too but we added poplar buds, wood bettony, and a bunch of birch twigs and bark instead–go figure. Fermented with a Canadian/Belgian ale yeast and tarted up with acidulated malt, it’s a nice change-up for your drinking pleasure; unusual, smooth, and quite crushable!


LOCAL HEROES

tadmonsterIt’s another seasonal reincarnation of our Yankee Badass recipe! Pounds of homegrown Centennial and Casacade from the Baker Plantation in York Me. were used in wet-hop additions creating this local liquid phenomenon!

The Clovers - Love Potion No 9 (single)This mysterious big gruit features his and hers aphrodisiacs: Yohimbe bark from Africa might give him a bit of, ahem, a tickle and Muira Puama from South America will do the same for her. The domestic Damiana provides a bump for both! Slightly sweet, a tad tart, and rather viscous, this is a worthy experience indeedy!


LUMBERSEXUAL

These fellows are all over the damn place, aren’t they? Shouldn’t they have a beer named after them? Have a chuckle with us and a pint of this mellow Cali common style gruit featuring some rye spice as well as Sage, Wood Bettony, Blessed Thistle, and Spikenard. Neat on the top, wild on the bottom!


MACHiNE GUN

Also called India Dark Ale, India Black Ale, Cascadian Dark Ale, Dark IPA and sometimes India Brown Ale. You’ll call it YUMMERS.


MALCOLM

The main herbals are barberry bark, sweet flag, and privit fruit. Fermented with kasu from Blue Current Sake Brewery in Kittery, this gruit was first brewed on the anniversary of the great Malcolm X’s tragic death.

This sour beauty is a variation on our Lictenhainer Gruit. It’s built with pilsner and wheat malts along with a generous addition of rice flakes, instead of Lichty’s smoked malt. Spiced with hibiscus, spikenard, and Japanese knot weed–also known as monkey weed.

This is the first recipe from Josh Smith, the newest brewer on the EEB team. It’s a sultry quaff that achieves that special balance between roasty malt notes and Belgian yeast. Smoother than your usual stout, one seems to lead to another.

MUMME (Barrel-Aged)

mumme“I found this Mumme Beer (pronounced moom-muh) recipe in a booklet published in England in 1695, under the title “How to Brew as good Mum as any made in Brumswick.” However, the ingredients could not be more different than the traditional German Mumme, which adhered to the Reinheitsgebot.

English Mumme contains everything but the kitchen sink, including beans, elder flowers, wood betony, blessed thistle, birch tips, spruce tips, berberies, thyme, blessed thistle, cardamom and *pennyroyal! I suspect it tastes quite different from the German version, but that is true of most foreign imitations- even today.

The result has a heavy malt bill with Maris Otter pale malt, wheat, crystal malt, chocolate malt and malted oats going into the boil, in addition to fourteen pounds of beans. This explains an ABV of 8.1%.

It has aged for eight months in an oak Buffalo Trace bourbon barrel. We hope you will enjoy this reproduction of a unique beer that is itself a replica. Maybe next time we will have to make German Mumme.”  -Emerson Baker

Friend/customer Jeff hooked us up with 50lbs of feral pears from the old pear trees on his property for this latest seasonal brew! It sports mostly 2-row malt with some specialty grains along with catnip, mugwort, and skullcap. Fermented with brettanomyces lambicus, along with some wild yeasties grown from the pear skins. A perfectly balanced, mildly fruity quaff that that delicately whispers “autumn.”

And the name? Púca (poo-kah), is a spirit or ghost, primarily a creature from Irish folklore. The Púca is associated with the autumn harvest. In some locales, reapers leave a small share of the crop, the “púca’s share”, to placate the hungry creature.

vikingshipThis is a semi-accurate variant of the Finnish primitive ale of the same name. Mostly pils with some wheat and rye, juniper branches were used in the mash. After bringing the mash to sparge temp the wort was transferred directly into the fementer–no boil. Powdered juniper berries were added. Cloudy, tart, and faintly carbonated, this milky pour is rich in fruity and estery notes from a wheat specific yeast. Delicious and all together different!
